Pho is everywhere- one of the world's favorite Southeast Asian foods and the national dish of Vietnam. But before it was a global sensation- it was a humble noodle soup served by migrants from one small village called Van Cu. In Northern Vietnam for another shoot, we decided to take a drive to this forgotten hamlet to see what we might find, to dive into the history of Pho and to try the dish as it was meant to be served.
